Buying Guide: What to Consider When Choosing Olive Oil
Olive oil comes in three consumable forms: extra virgin, virgin, and refined. 9 The acidity level of extra virgin olive oil should be less than 0.8%, while that of virgin olive oil should be less than 2%. The acidity of refined olive oils is less than 0.3%, and these oils are nearly clear, odorless, and flavorless despite their low acidity.

Oils can be extracted using a wide variety of methods. Olive oils, particularly extra virgin and virgin varieties, are photosensitive. i) How is olive oil made?
Crushing the olives and then pressing them mechanically yields olive oil. Harvested olives are taken to a processing facility where the fruit is cleaned and the leaves and stems are removed.
